Ingredients

3 fl oz olive oil
12 corn tortillas
4 oz Monterrey Jack shredded
4 oz cheddar cheese shredded
4 oz cotija ground
4 oz mozzarella shredded

And our special ingredient:
DULCI CHILI SAUCE

Cheese Enchiladas with Chili Sauce

Servings: 4




Directions:

1. Pre-heat the oven to 350 degrees.

2. Heat the olive oil in a pan until it reaches 160 degrees. Add the tortillas one at the time for 5 seconds. Remove and place on a clean towel. Mix the chesses in a bowl. Divide the cheese on the 12 tortillas, leaving aside 1/2 cup of the cheese mixture. In a 9x13 baking dish pour 1/2 of the Dulci Chili Sauce. Spread over the bottom of the pan. Roll the tortillas up and place in a single layer on the sauce. Pour the remaining Dulci Chili Sauce over the tortillas and top with the 1/2 cup cheese set aside earlier. Place in the pre-heated oven and bake for 25 minutes.
