Roasted Lemon Garlic Cod with Blueberry Salsa
1. Preheat oven to 375 degrees.
2. Place cod on parchment – lined baking sheet and coat with lemon juice and garlic. Roast cod in preheated oven for 10 - 20 minutes or until fish is opaque all the way through.
3. Slice cod and add the Dulci Lemon Blueberry Salsa to taste.
We recommend this recipe to be served with a nice green salad or green beans, and couscous.
You can use chicken, turkey or lean pork instead of cod fillet.
